BREVIS BITTERSWEET: Klocke Estate’s Vermouth Spritz is a Pimm’s Cup Rival

Klocke Estate in Hudson swiftly secured itself as a destination brandy distillery, restaurant + bar. Cocktails with a view of the 160 acre estate are hard to beat, especially in summer when you might stumble on a jazz band. When The Dishing paired up with Klocke for crepes + vermouth spritzes, the sun was out, the music chill + the bartenders stirring up vermouth spritzes topped with Cava rather than soda water. You may have had their own brand Brevis red or white vermouth, but the addition of Brevis Bittersweet was revelatory. Topped with sparkling Cava and a thick orange wheel, the low-ABV cocktail could easily rival a Pimm’s Cup on a hot summer’s day. - SDP

THE BACKSTORY: In their own words: “While we wait for our brandy to age and our eaux de vie to rest, we are excited to share Brevis White, Sweet Red, and Bittersweet Vermouths: aromatized wines that play nicely in mixed drinks but are also delicious on their own or in a spritz.

WHY THIS ONE? A rich garnet color with bittersweet notes of black cherry, sarsaparilla, cola, conifer, smoke and a pleasant bitterness. Klocke may not see their vermouth as the north star of the distillery, but their bittersweet vermouth is the one I took home. Topped off with Cava and juicy orange slice for citrus sweetness, the bitterness is softened + absolutely falls in the family of a classic Pimm’s Cup. Maybe try it with some cucumber and fresh mint for a real test.

GIRL DINNER OR SNACK TO PAIR: If you’re visiting Klocke, their restaurant is only open for dinner but their new creperie sidecar has a selection of sweet and savory pancakes. Pretty perfect paired with a spritz.
