The inspiration: “The Clover Club is one of my personal favorite cocktails which reads decadent without being heavy. Adding Piro olive oil felt natural because it combined two different techniques: adding aeration & volume combined with the egg whites while also adding smooth texture & mouthfeel to the cocktail with the olive oil.
From a flavor perspective, raspberries & olive oil work well together, even if it's not a common combination. I've always enjoyed fat-washed spirits from olive oil-washed gin to duck fat-washed bourbons. To preserve the vegetal aromas and flavors of the Piro olive oil, it’s best added à la minute—made when the customer orders it. The test-run of the Clover Club with the olive experiment paid off and yielded an aromatic cocktail that was every bit as interesting as it is delicious.” — AK
The build: A combined 3/4-ounce olive oil and ¼ egg white are added to the gin, raspberry syrup and lemon juice and emulsified with a milk frother to maximize the foam. Served in a coupe.
