TASTE: MARTINI RAMIRO—When Sherry Met Tequila

At Andalucían-inspired Mirador in Kingston, N.Y., head bartender Seth Jones likes to “Trojan-horse” sherry into the cocktails. But the Martini Ramiro is a revelation for its pairing of Manzanilla sherry, tequila blanco + pickled ginger brine.

The cocktail: Martini Ramiro 

The Ingredients: Manzanilla Sherry, Anejo Tequila aged in vino de naranja cask, pickled ginger brine, pickled ginger 

The inspiration: The drink is named after Ramiro Ibanez, a winemaker in Sanlucar De Barrameda. While Mirador-owner Nick Africano and I were visiting him, he told us a favorite drink of his is a simple equal parts martini made with tequila, Manzanilla, and a twist of fresh ginger. We loved this but replicated it by balancing it out with an aged tequila and just a splash of pickled ginger brine.

The build:  Equal parts Manzanilla and aged tequila. A bar spoon of pickled ginger brine. Stirred into a coupe, with a skewered pickled ginger “flower”.
