ZERO PROOF: PINK JEANS by Trudy Steier, Savoy Taproom
For The Dishing’s ZERO PROOF non-alcoholic cocktail series, Trudy Steier, beverage director at Savoy Taproom and Copper Crow, serves up a non-alcoholic twin to their signature Pink Jeans.

The cocktail: Pink Jeans (zero-proof version)
The Ingredients: Seedlip Garden 108 (non-alc spirit), lemon, sugar, plum bitters, raspberry beet shrub, club soda, lemon zest
The Inspiration: “We have some bespoke options at both Savoy Taproom and the Copper Crow. N/A aperitifs and spirits are springing up everywhere, but they can have very short shelf lives, so Lyre’s is a great cost effective option without sacrificing quality. I’m a spritz girl so I make sure we have one on every menu because they’re an easy way to do low ABV as well. Who doesn’t love bubbles?
So the Pink Jeans is an homage to an original classic Savoy cocktail called the Peachy Gina. We couldn’t get the shrub we originally used in it anymore after 2018, so we started making our own and changed the ingredients a little bit. To offer it as a zero-proof cocktail, we substituted the Boomsma genever for Seedlip Garden 108. “ — Trudy Steier.
The build: Combine the ingredients and shake. Pour over ice in a Collins glass and top with club soda and lemon zest.
