The cocktail: Prettier in Pink
The ingredients: Fort Hamilton gin infused with a blueberry lavender butterfly pea flower tea, dragon fruit liqueur, rose water, lemon juice, fee foam, and edible glitter, topped with a pet-nat rosé. Tea infusions are huge for us: The tannins in tea dry your cocktails out. I’ve never been a sweet cocktail type.
The inspiration: It’s a French 77 on steroids. I was feeling ambitious for Valentine’s Day and we ran 5 cocktails as specials for the weekend, but because of it’s popularity this drink never left the menu. [Ed. note: A French 77 uses elderflower liqueur - like St. Germain - in place of the simple syrup you’d find in a French 75, for a more floral, delicate flavor. Wolfgramm uses the butterfly pea flower tea, dragon fruit liqueur + rose water in lieu of elderflower.]
The build: We batch the gin, dragon fruit, rose water and glitter. We’ll add lemon juice and fee foam, reverse dry shake for foaming purposes, and top it with the pét-nat rosé. This cocktail looks sweet but it isn’t. It’s like a sweet-tart, more tart than sweet, and a beautiful sparkling pink color.
