TASTE: THE GYRO-INSPIRED “GYBSON” MARTINI
Milas Bar Director Andrew Patterson draws inspiration from a Gibson at Dear Irving + the heady scent of roasting lamb ribs.

The cocktail: The Gybson (gyro-inspired Gibson)
Ingredients: Roast lamb fat-washed gin, dry vermouth, bianco vermouth, sumac onion brine
The inspiration/backstory: “This one was inspired by the Gibson at Dear Irving in NYC. They make their own cocktail red onions and it reminded me of Milas sumac onions that are served on our gyro, short ribs, pides etc. They are insanely delicious and once in a while I’ll take a sip of the brine because it’s so addictive! Chef was roasting a giant pot of lamb ribs with aromatics and the smell was so consuming I knew I wanted to steal some. Lamb generally has a low fat content but the ribs have a lot more that you’re able to render off. So that’s how I started with the roast lamb fat-washed gin.” - AP
The build:
2oz roasted lamb fat-washed gin
.50oz dry vermouth
.50oz bianco vermouth
.25oz sumac onion brine
Stir over ice and strain into a martini glass. Garnish with house pickled sumac pearl onion
