The cocktail: Green Tomato Spritz
The ingredients: C. Cassis Green Tomato Aperitif, gin, C. Cassis, club soda
The inspiration: Here we are, making delicious things out of weird fruit again! The process for making this aperitif is much like vermouth. We take perfect end of season green tomatoes and tendrils blended with Vidal/Chambourcin rosé, and aged for 18 months in a pommeau barrel. Its vegetal acidity meets caramelized warmth for deep balance in a bottle. — RP
The build: Build in a glass over ice. Top with club soda, float with cassis, garnish with lemon peel, edible flowers or ground cherries.
