The cocktail: Green Tomatini
The inspiration: Our garden was full of tomatoes and we had just released our Green Tomato Aperitif. Our friend Theodore had been making tomato water and we were interested in the idea of a tomato martini but wanted it to be clarified, far away from bloody mary territory. We researched a few recipes and put together this build to really incorporate our new releases (the vodka and the aperitif), and made one of our favorite drinks we've ever had.
The ingredients (batch recipe):
32oz strained Heirloom Tomato Juice
large pinch sea salt
4oz lemon juice
2oz sherry vinegar
2 bottles C. Cassis Green Tomato Aperitif
2.5 bottles Matchbook Distilling x C. Cassis Vodka Currant
5oz water
20oz whole milk
The build: Blend all ingredients except milk together in a large vessel. Add milk to a separate large vessel and slowly pour tomato blend into milk. Allow to settle for 2-3 hours then strain through a coffee filter (this is slow and tedious but worth it!). Put strained batch into bottles and store in fridge. Shake 3oz in a tin with ice and strain into a coupe to serve, garnished with fresh basil, basil oil, and dehydrated green tomato slices.
