The cocktail: PERIWINKLE POM —by Andrew Patterson
Ingredients: Fré N/A sparkling brut, house-made green-tea-cardamom grenadine, acid-adjusted pomegranate juice, mint
The inspo: “For January, I’m doing some special mocktails each week, but a popular one on our current menu is the Periwinkle Pom.”
The build: You’ll need to first make the green-tea cardamom grenadine and acid-adjusted pomegranate juice. (Ed. note: You could skip that step to make this cocktail at home.)
For the cocktail:
1 ounce acid-adjusted pomegranate juice
0.50 ounce GTC Moussan grenadine
• Shake with mint
• Double strain in a flute
• Top with non alc Prosecco
• Garnish with mint
To make the green tea-cardamom grenadine:
16oz pomegranate juice
Equal weight in sugar
3 green tea bags
5 grams toasted green cardamom pods
• Stir and let infuse for 2 hours
To make the acid-adjusted pomegranate juice:
16oz pomegranate juice
21.3 grams powdered food-grade citric acid (available in supermarkets)
Add the powdered citric acid and stir or shake until dissolved.
