The cocktail: Second Hand Smoke

Ingredients: Giffard N/A pamplemousse spirit, smoked rosemary and grapefruit oleo saccharum, topped with soda. Garnished with a toasted rosemary sprig.

The inspiration: “I wanted to create an aesthetically pleasing mocktail that makes people feel like they’re are still part of the party. Also, keeping the ingredient list affordable because no one wants to pay cocktail price for a mocktail these days! And using ingredients that contribute to our waste-free bar operations.

The inspiration behind the cocktail was ‘Nothing left behind.’ The smell of burnt rosemary on the grill after service, the grapefruit peels left from juicing. We wanted to capture that feeling. Bright without sweetness, smoke without heaviness, and the ritual without alcohol. No one left out, nothing left behind.

I’m also currently working on a soda pop shop style menu for the summer. I’ve got an orange and vanilla bean Oleo that we’re going to down creamsicle-style mocktail, a raspberry mint lime soda, and a celery, green grape, and green apple soda. All made to order but made to be affordable and use the waste that our bar provides.” - ZW

The Build: The oleo saccharum is made with sugar, grapefruit peels, burnt rosemary, and fresh grapefruit juice. A base recipe is here.

1.0 Giffard pamplemousse n/a spirit
2 oz of the rosemary-grapefruit oleo saccharum
Shaken, strained over fresh rocks, and topped with soda. Served in a Collin’s with a toasted rosemary sprig.
