Style: Italian, casual, blue and white striped umbrellas, interior decor recreates a pop up restaurant the owners hosted while living onsite at an Italian winery

Via Cassia does what we’ve dreamed should be possible upstate: Modern Italian, loosely Mediterranean, mixing California cool + Italian simplicity with Hudson Valley bounty. This is an effortless spot as easy to drop in for an aperitif with salumi and formaggio, as for a 3-course dinner, or dinner of passed plates and flowing wine with friends. Go for al denta pasta and filled pastas, really impressive salads especially the Cali black kale with ricotta salata and truffle (when has salad been so memorable?!) , and Chef Gaetano’s storied dishes that connect 3 generations from Italy to California and Detroit. If you’re often underwhelmed by old-school menus at Italian-American restaurants upstate, head to Via Cassia for a modern-day spin as you’d eat in Italy 2025. To be honest, much of the experience is thanks to the style of pre-pandemic service with Italian olive oil poured table side just like the sambuca poured over ice cream for dessert.
