The cocktail: Neverstill Riesling Spritz
The backstory: Christy Counts has no problem using her Finger Lakes wines in cocktails. With growing interest in low-ABV drinks, it’s no surprise to see wine-based cocktails enjoying a come back — but these are not the wine coolers of the 1980s. In this Neverstill Riesling Spritz, we have two women-led Hudson Valley brands joining forces in one glass. Pick up Christy Counts’ Neverstill dry riesling + Rachael Petach’s C. Cassis blackcurrant liqueur + stir up this fresh summer cocktail. It’s perfect with charcuterie or pizza and it’s easy to batch for a crowd.
Ingredients: 2-ounces 2023 Neverstill Dry Riesling
1-ounce C. Cassis aperitif
0.5-ounce lemon juice
1 to 2-ounces of club soda
Oleo sacrum to mist (optional)
For the build: Add ice to your glass. Pour in the wine, C. Cassis + lemon juice. Stir. Top with one to two parts of club soda (depending on how strong you want your spritz.) We finish our spritz with a spray of lemon zest oleo sacrum which gives the drink a really elevated lemon taste. The citrus plays so nicely with the floral notes of the riesling and the berry notes of the aperitif. - Christy Counts
