BOTTLE CRUSH: Txakoli + savory popcorn

Txakoli is a crisp, citrusy and minerally Spanish wine with a light fizz and low ABV making it an indisputable match for hot summers and lazy pool or lake days, so I was thrilled when Jes Rich, owner of Sage Wine + Spirits in Ballston Spa recommended this bottle in time for the 4th July. THE PRICE: $23.99
THE BACKSTORY: Txakoli ("chah-kuh-lee") is a style of wine from the Basque country of northern Spain made from the native grape, Hondarrabi. Txomin Etxaniz can trace their family's winemaking tradition back to the 17th century and the grapes used in this wine were planted between 1915 and 2000.

WHY THIS ONE? “It would be fair to say that if you are going to try one Txakoli, this should be it. Light, bright acidity and mineral freshness are the hallmarks of the style with tart fruit and a just a touch of salinity. This wine is mouthwatering.”

GIRL DINNER OR SNACK TO PAIR: “You could certainly drink this with seafood, fresh or tinned, but my favorite pairing is a savory popcorn that's easy and quick to make. My standard recipe is popped in a pot with olive or coconut oil. I lightly coat it with a little melted butter, and sprinkle on a blend of garlic powder, paprika, chili powder and finely grated parmesan (pre-packaged works best). Give it a good mix to coat and you have a wholesome, savory snack that will be as more-ish as this wine.”
