The dish: Honey pie with torched chai meringue
The backstory: “We wanted to do a dessert featuring my honey, and I did some r&d with a few different recipes and decided to combine the best parts: a honey custard bottom with the chai spice meringue top. It delivered the Goldilocks of pie combos - sweet, salty, a nice amount of volume and height without being too heavy or rich. The crust is a basic gluten free pretzel crust. GF pretzels were used initially to keep the whole dessert gluten free as we always try to keep our full menu offerings balanced for guests with dietary restrictions, but I then discovered that the GF pretzels have a significantly better crunch and held up better texture wise than regular pretzels with the custard pie.”

”Yes! Construction presses on at the corner of First and Adams in Troy. The back rebuild has been fully framed out and closed off and the new roof for that space will be going on this week. Still anticipating a spring 20206 opening.”
