It’s official. Bar director Andrew Patterson will be leaving Milas Restaurant, where his creative, kitchen-inspired cocktails have attracted a loyal following. His last shift is May 15, 2026, just two days before heading to Thailand and Vietnam for a “6-week flavor study” as he called it when we talked about his plans.
Patterson will be Head Bartender at Sweet Polly, a 40-seat cocktail lounge, which sits at the cusp of Park Slope and Prospect Heights in Brooklyn, in view of Flatbush Ave. Of course, Patterson is no stranger to South East Asia having traveled extensively in the region and worked at the famed Attic Bar in Kuala Lumpur, which he credits for some of his techniques and approach to mixology.
The GM at Sweet Polly is Patterson’s childhood best friend who reached out as soon as the opportunity opened up. With full creative control of the menu, Patterson says he “couldn’t pass it up” and is “excited to push the limits.” While we’re well versed with his global flavors and love of Asian ingredients, these summer travels are “to explore more flavors and get some inspiration” for his opening menu at Sweet Polly.
With his former number two, Brianna Wells, soon to open her own bakery-cafe, Oh, Honey, Milas recently hired bartender Collin Myers (Morrissey’s at The Adelphi, Osteria Danny) to train alongside Patterson before taking on the bar director role.
